Pichaya Utharntharm, also known as Chef Pam, is one of the most recognisable faces in the Thai culinary world. She owns several restaurants in Thailand, including SMOKED, The Table, HIYA, and Potong. Her passion for food has been recognised by Forbes 30 under 30 (2018). Chef Pam is also a judge on Top Chef Thailand and host of her own cooking show.

On Food and Cooking by Harold McGee

I would recommend this book to everyone in the food industry because it will definitely help you understand the science behind cooking!

 

The Noma Guide to Fermentation by René Redzepi & David Zilber

Fermentation is awesome! Years and years of knowledge and trial and error. I would definitely recommend this book to someone who is in love with kombucha, lacto and koji fermentation, and willing to explore what it has to offer.

 

The Flavor Bible by Andrew Dornenburg

There are a lot of flavor profiles that I dThe Flavor Bibleidn't know would exist in this book, but there you go — bam! Blew my mind. Some of the elements in this book have taught me how I design and cook my dishes today!

The Franklin Barbecue Collection by Aaron Franklin & Jordan Mackay

I have loved BBQ since when I was in the US. One of the intriguing things that always inspired me was smoked meat. There are tons and tons of hours poured into smoking pieces of meat and that's something I believe lots of people should know about!
